Lets take the noun Guru for example. When Guru has a preposition ( through, for in, by, without) next to it then it will be spelled with the orthographic pattern ਗੁਰ.. Lets look at some examples from Anand Sahib ( the prepositions are in bold)
( bihari gives meaning through grace of guru)
4.. ਪਾਇਆ ਅੰਮ੍ਰਿਤੁ ਗੁਰਿ ਕ੍ਰਿਪਾ ਕੀਨੀ ਸਚਾ ਮਨਿ ਵਸਾਇਆ ॥

ਜੇ ਕੋ ਸਿਖੁ ਗੁਰੂ ਸੇਤੀ ਸਨਮੁਖੁ ਹੋਵੈ ॥ heres an exception a preposition with the orthographic pattern ਗੁਰੂ
There was an exception of the first pangti because of its poetic chaal ( laghu guru, soft and deep phonemic sounds)

Grammer rules have consistency but there are few exceptions when poetic measures take precedence

If you can memorize the few poetic exceptions then you wont need to memorize the rest if you keep the grammar principles in mind.
