ਣੁ, ਧੁ, ਰੁ have aunkar underneath - 1) could you please explain the role of each and the proper translation of this pankiti ?

ਦੇਹਿ ਨਾਮੁ ਸੰਤੋਖੀਆ ਉਤਰੈ ਮਨ ਕੀ ਭੁਖ ॥

also, 2) why does ਰੈ have dulaanvaa as opposed to just laanv?

ਗੁਰਿ ਵਣੁ ਤਿਣੁ ਹਰਿਆ ਕੀਤਿਆ ਨਾਨਕ ਕਿਆ ਮਨੁਖ

3) ਣੁ does the aunkar mean singular, or "noo" (guru ne van nu, thin nu, harayaa keethaa hai)

4) and should ਹਰਿਆ ਕੀਤਿਆ should be pronounced with bindi on the kannaa ?

The Anukand is there at the end of ਵਣੁ ਤਿਣੁ because they are singular collective masculine noun words. There are many exceptions to this rule. Many singular masculine noun words don't have an Aunkad in the end. There are 4-5 conditions under which the Aunkad gets removed. This is hard to explain through this post. It is required that you take lessons on Gurbani grammar from someone.
