ਸਰ-ਸੇ vs ਸ-ਰਸੇ

What is the correct pronunciation?

I have learned ਸ-ਰਸੇ but I was told by someone that everyone has always pronounced as ਸਰ-ਸੇ

Similarly for ਸਰਸਿਅੜੇ, is it ਸ-ਰਸਿਅੜੇ or ਸਰ-ਸਿਅੜੇ? In keertan we have always heard ਸਰ-ਸਿਅੜੇ but I have learned ਸ-ਰਸਿਅੜੇ

Popular pronunciation of these words is not a proof that it's correct. You have already pointed out the correct pronunciation of these words.

ਸ-ਰਸੇ = ਰਸ ਨਾਲ ਭਰ ਜਾਣਾ,
ਸਰਸੇ/ਸਰ-ਸੇ = ਅੰਨਦ ਨਾਲ ਭਰਪੂਰ ਹੋ ਜਾਣਾ/ ਖੇੜੇ ਵਿਗਾਸ ਵਿੱਚ ਆ ਜਾਣਾ

So he mentioned that in Sri Anand Sahib, the second and prevalent pronunciation makes more sense.
