in the southern US, "hoppin' john" is a traditional food to eat on new year's day. since it's a tasty but simple vegetarian recipe, i thought i'd share it.
3/4 cup black eyed peas (lobia)
1/2 cup rice
2tb olive oil
half onion (diced)
2 tomatoes (diced)
diced garlic
thyme
oregano
red chili powder (just a dash)
salt
2 cups veggie broth (use lightly salted water if no broth is on hand)
simmer the lobia in water until barely tender (about 50 minutes)
add the rice to a pan with the oil and fry lightly for a couple of minutes until fragrant and beginning to get golden
add onions and spices and cook until onions are soft and clear
add to the pot with the lobia and all remaining ingredients
bring it to a boil, then turn to low and cook until most of the liquid is gone (about an hour)
let it sit for 10 minutes then serve
